PESTO AND MOZZARELLA TOASTS

Not a recipe really – more an assembly. No better way to enjoy really good mozzarella.
INGREDIENTS
- Small French stick
- Tub fresh pesto or a jar
- Laverstoke Mozzarella
- Sea salt and coarse ground back pepper
Serves: 4
METHOD
Thinly slice and lightly toast the bread.
Spread pesto over one side.
Slice mozzarella (may need two balls depending on how much bread you have.)
Toast until melted.
Sprinkle with sea salt and coarse ground black pepper.
