HONEY-THYME FETA WITH TOMATOES & OLIVES

Salty feta, sweet fragrant honey and a sprinkle of fresh thyme from the garden. This Cuisine At Home recipe is delicious with some good flatbreads.
INGREDIENTS
- ¼ cup honey
- 1 tbsp chopped thyme plus more to top
- 1 tsp black pepper
- 2 tbsp flour
- 1 egg beaten with 1 tbsp water
- ¼ cup panko breadcrumbs
- 1 block feta
- 2 tbsp lemon zest
- 5 tbsp vegetable oil
- 1 cup halved cherry tomatoes
- 1 cup pitted kalamata olives
Serves: 4
METHOD
Whisk together the honey, thyme and pepper.
Place flour, egg wash and panko intro three separate shallow bowls.
Dredge feta in flour, coat with egg wash then panko, pressing lightly to make it stick.
Saute zest in oil over a medium-high heat until golden (20-30 seconds). Drain on kitchen paper.
Place on your serving plate and drizzle honey over to taste. Top with fried zest and some more thyme.
Serve with tomatoes and olives.
