The latest #eatsouth challenge was to showcase our local producer, ChalkStream Trout from Romsey in Hampshire.
Our #eatsouth home cooks had the option of choosing anything from the larder of the ChalkStream Trout website. They then had to produce a dish showcasing it.

If salmon is the king of fish, then surely the delicate trout must be the crown prince.
So often overlooked in favour of salmon, trout has all the health benefits of its popular cousin, as well as a milder, slightly nutty flavour.
Determined to get more people hooked on this freshwater fish, ChalkStream Trout near Romsey source, prepare and deliver the finest English rainbow trout from their sustainable farms, which draw from the fast-flowing clear waters of the world-famous Test and Itchen Rivers.
Their firm, athletic trout, rich in protein and vitamin D, low in fat and high in flavour, is enthused over by top chefs like Yotam Ottolenghi and Jamie Oliver, as well as being served to diners at The Ritz, The Pig restaurants, Lime Wood and Chewton Glen.
Pan-roasted, poached, smoked or cured, rainbow trout tastes delicious and is easy to prepare – even for those who are nervous of cooking with fish.
We decided to try it for ourselves and ordered a selection of fresh ChalkStream trout fillets and cold smoked trout. Even the self-confessed salmon doubters among us gave it a go and were won over by its subtle flavour.
